The key to airline meal preparation is a method called “chill-and-reheat” (or the cook-chill process). The food is prepared to be only partially cooked on the ground, then rapidly chilled, and finally cooked to completion aboard the aircraft.

1. Ground Preparation (The Catering Kitchen)
Catering is usually outsourced to massive, specialized facilities (like LSG Sky Chefs or Gate Gourmet), often located right next to the airport.

- No Fresh Cooking: There are no full kitchens or ovens on commercial passenger planes. The galley equipment consists primarily of convection ovens and chillers/refrigerated compartments.
- Final Reheating: Approximately 20–30 minutes before serving, the sealed trays are placed into the convection ovens to be heated. The ovens use dry heat, which is another reason food can taste dry.
- The Temperature Constraint: Food must be reheated to a minimum temperature of $60 ($140) to kill any bacteria that might have grown during storage. This high reheating temperature often further degrades the texture and flavor, adding to the “blandness” discussed earlier.
✈️ THE SAFETY FACT: If food is prepared using the cook-chill method, it is required to be held at low temperatures throughout the entire journey—from the ground kitchen to the moment it enters the oven on the plane. This stringent temperature control makes airline food one of the most strictly regulated and tested foods in the world.
3. Packaging and Logistics
The packaging is designed with two purposes: efficiency and safety.
- Aluminum Foil Trays: These are standard because they distribute heat quickly and evenly in the convection ovens.
- Moisture Seal: The foil covering helps trap the limited moisture during the reheating process, attempting to keep the food from drying out completely in the already dry cabin air.
- Standardized Carts: All meal carts and trays are built to standardized sizes, allowing them to be interchangeable across different aircraft models and ensuring quick loading/unloading between flights.
